Guacamole California Salsa Asian Buffalo Sauce Spicy Hummus

Guacamole by Vitamix

Dietary Interest: vegetarian, gluten-free, low cholesterol, no added sugar, raw foods, vegan

Yield: 1 1/2 c (360 g)

Difficulty: Easy

Total Time: 10 Minutes

 

Ingredients

  • 1 medium tomato, halved or 3/4 cup chopped
  • 1/2 cup (10 g) fresh cilantro leaves
  • 1/4 cup (40 g) chopped onion
  • 2 Tablespoons (30 ml) lemon juice
  • 1 teaspoon salt
  • 2 ripe avocados, peeled, pitted

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 3.
  4. Blend for 15-20 seconds, using the tamper to press the ingredients into the blades.
  5. You may need to stop the machine and run a spatula around the inside of the container to integrate ingredients.
  6. Do not over mix. Leave chunky. Serve with tortilla chips.

When doubling recipe, increase avocados to 4 and increase onion to 1/2 cup (80 g).

California Salsa by Vitamix

Dietary Interest: vegetarian, gluten-free, low cholesterol, low fat, low sodium, no added sugar, raw foods, vegan

Yield: 5 c (1.2 kg)

Difficulty: Intermediate

Total Time: 15 Minutes

 

 Ingredients

  • 1/2 (55 g) medium onion, peeled
  • 1 (10 g) jalapeño pepper, seeds and membranes removed
  • 1/4 cup (5 g) fresh cilantro
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon salt (optional)
  • 6 (672 g) ripe Roma tomatoes, quartered (24 quarters), divided use

Directions

  1. Place onion, jalapeño pepper, cilantro, lemon juice, and six of the tomato quarters into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase to Variable 5.
  4. Blend for 15-20 seconds, using the tamper to press the ingredients into the blades.
  5. Reduce to Variable 3 and remove the lid plug. Add the remaining tomatoes through the lid plug opening.
  6. Blend for an additional 10 seconds or just until desired consistency is reached, using the tamper to press the ingredients into the blades. Do not over mix, leave chunky. Serve with tortilla chips.

Asian Buffalo Sauce by Vitamix

Dietary Interest: vegetarian, low cholesterol, low fat

Yield: 1 1/2 c (360 ml)

Difficulty: Intermediate

Total Time: 6 Minutes

 

 

Ingredients

  • 1/4 cup (60 ml) soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon hot sauce
  • 2 Tablespoons (30 ml) honey or agave nectar
  • 1 orange, peeled, halved
  • 1 1/2 x 1 1/2 inch (4 x 1.3 cm) cube fresh ginger root
  • 1 garlic clove, peeled
  • 2 inches (5 cm) strip of orange peel

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds until smooth, using the tamper to press the ingredients into the blades.

For serving: Toss cooked wings in sauce. This is a low fat twist on traditional Buffalo wing sauce. You can also serve it with grilled ribs, chicken, or tofu.

Spicy Hummus by Vitamix

Yield: 3 1/4 c (780 ml)

Difficulty: Easy

Ingredients

  • 15 ounces canned garbanzo beans, drained
  • 15 ounces canned garbanzo beans, with liquid
  • 6 teaspoons hot sauce
  • 2 Tablespoons (30 ml) lemon juice
  • 1 raw garlic clove, peeled
  • 1 teaspoon salt (or to taste)

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute or until smooth, using the tamper to push the ingredients into the blades.
